Information

Potassium Sorbate is the potassium salt of sorbic acid (E 200). It is produced by industrial neutralization of sorbic acid with potassium hydroxide.

Usage

Potassium sorbate is used to inhibit yeast and mold growth in cheese, yoghurt, dried meat and pastry. It is also used in the production of wine to prevent the function of biological acid dividers and to prevent further spread of residual sugar. However, in view of the specific requirements for wine, wine bottles need not be labeled. The maximum dose for wine is 200 mg / kg. It is used as a preservative in many cosmetic products.

It inhibits the growth of yeast, fungi and some bacteria. It has no bactericidal effect, so it only extends the hygiene of flawless products. Its effectiveness in acidic environments (ph <6.5) is highest. Its use is similar to sorbic acid, but much more soluble. Also soluble in water and fats. It does not affect the taste of the food in the amount needed for the preservative.
